BUTTERMILK ROLLS 1/2 cup lukewarm water & teaspoon sugar 1 package yeast 1 cup thick buttermilk 1/4 teaspoon soda 1 teaspoon salt 3 tablespoons melted shortening 3 cups (about) all-purpose flour Heat buttermilk in double boiler until lukewarm. Then turn into large bowl. Add soda and other ingredients. Place 2 inches apart. Makes about 18 dinner rolls. Bake 20 minutes at 375° oven. LUNCH ROLLS pkg. Fleishman's yeast 1/4 cup milk, scalded & cooled tbsp. sugar tbsp. melted shortening cups flour tsp. salt eee ae DO ed ol Sprinkle yeast in 1/2 cup warm water with 1 tablespoon of sugar added. Let stand iO minutes in warm place, then stir yeast into warm milk. Add 2 cups of the flour, beat thoroughly, add egg well beaten, balance of flour and salt. Knead lightly, using as little extra flour as possible. Place in well-greased bowl and set in warm place for 2 hours. When light, form into balls the size of walnuts and place 1 inch apart on well-greased shallow pans. Let rise until double in bulk - about 1/2 hour. Brush with egg and milk and bake 10 minutes in hot oven. Start these buns at 9:30 aem. and have them warm and crisp at noon. - Mrs. A. Stockwell. BREADS REFRIGERATOR ROLLS 2 packages fast-rising dry yeast 1/2 cup. sugar 2 1/2 cups lukewarm water 8 cups flour 1 tablespoon salt 2 eggs 2 tablespoons shortening Dissolve yeast and sugar in 1/2 cup lukewarm water - 20 minutes. Sift flour, measure and add salt. Add the beaten eggs and dissolved yeast to remaining 2 cups of water. Gradually add half the flour, then melted shortening. Gradually beat in the rest of the flour and knead dough on a lightly floured board until smooth. Place dough ina greased bowl, brush the top with melted shortening. Cover. Keep in refrig- erator until needed. Then cut off the amount of dough required and shape into rolls. Let rise in warm place until light. Bake in 375 to 400° oven. This dough may be kept in the refrigerator for 6 to 7 days and small amounts used as required. Knead down occasionally to prevent over rising. - Mrs. G. V. Henschke. HOUSEHOLD HINTS: Rub a scorch spot lightly with vinegar, then wipe with a clean cloth and the spot will disappear. Apply a mixture of turpentine and warm milk to dulled oil-cloth and it will look like new.
