MEAT BALLS IN TOMATO SAUCE 1 1b ground beef 3/4 cup tomato catsup 1 egg 1% cup tomato juice 6 soda crackers, rolled % cup chopped celery 1 tsp salt % tsp nutmeg Dash of pepper Finely chopped onion Finely chopped green pepper Add egg, cracker crumbs, onion, green pepper and seasonings to ground meat, combine well. Form into small balls, about the size of a walnut. Place in a 4 qt. casserole. Combine ketchup, tomato juice and chopped celery. Pour over meat balls. Cover. Bake in 43500 oven for l hr. serve with rice that has had 2 tbsp parsley added or serve with spaghetti. Serves 6. Meat balls may be cooked in a covered electric fry pan if desired. Form into balls about 1% inches.’ Brown meatballs, add soup cover and simmer about 25—430 mins. Serves 4. Mrs. Greta Cieckievic BEEF SHORT RIBS Roll beef ribs in seasoned flour and brown for 20 mins in 450° oven. Remove ribs from pan, put in 1 cup coursley cut carrots and 1 cup cut onions, add garlic or garlic salt to taste, 1/8 tsp thyme. Place ribs on top of vegetables, add 2 bay leaves and pour over 1 can tomato or consomme soup. Cover and bake at 3002 oven for 1% to 2 hours.
