PIES Pies are a universal dessert — even the Greeks and Romans had their honied pastries. Since we have so whole heartedly adopted them they have become a standard item in all our homes. We have them in all forms: fruit, berries, custards, chiffons and, of course, our own holiday mince without which no Christmas menu is complete. ‘Io be a good pie maker is to be known as an excellent cook. NEVER FAIL PIE CRUST MIX Blend together | lb. lard, 5 cups flour, 2 tsp. salt. Whip up | egg; add 3 tbsp. brown sugar, 3 tbsp. vinegar, 74 cup water and add to first mixture. This pie crust remains pliable at all times and can be stored in a frig. B. C. APPLE PIE 1 cup sugar 7 cups thinly sliced B.C. apples 1 tbsp butter Pastry for 9-inch pie: Prepare pastry. Wipe, quarter, core, peel and slice apples, then measure. Arrange apples in layers in pastry-lined deep 9-inch pie plate. Sprinkle each layer with sugar. Dot top layer with small pieces of butter. Cover with top crust. Place pie on lowest rack in oven preheated to 450 degrees F. (very hot ove Bake for 10 minutes then reduce oven temperature to 350 degrees F. (moderate oven) and bake for 30 to 35 minutes longer. Delicious served warm. or cold. DEEP-DISH APPLE PIE 2 cups sifted all-purpose flour 2 qts thinly sliced apples 4 tsp salt 1 teaspoon cinnamon 43 cup shortening 114 to 114 cups sugar 3 to 4 tbsp water l4 tsp nutmeg Sift flour with salt; cut in shortening until mixture resembles coarse corn- meal. Add water gradually, mixing lightly, just until flour is dampened. Roll pastry on lightly floured board to 1%-inch thickness. Cut out piece to fit top of 2-quart baking dish. Use scrap pieces to line sides of dish and form anchor for the topping. Mix apples with sugar and spices and place in well-greased baking dish. Slash the pastry topping to permit the escape of steam. Adjust the topping, sealing edges securely. Bake 15 minutes at 425 degrees F., then reduce heat to 350 degrees F. and con- tinue to bake for 50 minutes longer, or until apples are tender. Serves 8.
