PYROHY (VARENYKY) Margaret Peiluck UKRAINIAN PASTRY: 2 T. butter 3 C. all purpose flour 1 C. homogenized milk at room temp. Y2 tsp. salt 1 egg Warm butter to melt and add to milk - then cool. Beat egg and add to milk mixture. Blend in flour and salt. Cover bowl with a dish cloth and let stand for a half hour before using. More flour may be needed as mixture should be kneaded until smooth and elastic. Roll out as for pie crust and cut with a round cookie cutter. Place the round on palm of hand and put a spoonful of filling on it, and fold over to form a half-circle. Press edges together with your fingers, making sure edges are free from filling, and pressed well together to prevent filling from running out. Place the Pyrohy on a tea towel side by side without touching one another. Cover with another tea towel to prevent drying out. Drop into boiling, salted water (about 1 teaspoon of salt) and stir with a wooden spoon to prevent sticking to bottom. Boil 4 to 5 minutes. Strain in a colander and pour 1 cup of cold water over them. Drain, place in adish, sprinkle with vegetable oi! and turn gently to coat evenly. Chopped ‘ onion and small pieces of side bacon browned in oil could be used if desired. Serve hot, with salt and pepper, or sour cream. 2 tablespoons (could be added to the boiling water) of vegetable oil seems to help with preventing Pyrohy from sticking while cooking, however this is optional. FILLINGS POTATO: 2 C. mashed potatoes salt, pepper to taste 2 T. cooking oil ¥Y2 T. chopped onion Saute onion in oil, season and add to potatoes. Mix well. PLUM FILLING: 1C. water sugar to taste 1C. prunes Bring to a boil. Let cool, remove stones (or could use packaged prunes that have already been stoned) and let drain on an absorbent paper. Chop fine. SAUERKRAUT: Scald 2 cups sauerkraut, drain, and press out water. Chop fine. Fry 2 cup chopped onion in 4 tablespoons vegetable oil and add to sauerkraut. PYROHY when cooked (potato and sauerkraut) may be fried in butter, with of course the chopped onion and small pieces of side bacon. Plum filled Pyrohy may be lightly browned in oven if they were not eaten right after being boiled and have been refrigerated. | -
