III]. The Dish Prepared at Home—

Mothers may take turns in preparing the hot dish for the whole
class. This has proven a satisfactory method in some schools, par-
ticularly small schools, although its success depends on the co-operation
of the mothers. A better suggestion for many communities would be to
employ one woman to prepare the school hot dish each day.

The dish prepared at home can either be reheated at school or
packed in a homemade “hot lunch box”.

Equipment Needed at School for Reheating Dish Prepared at Home
Large kettle—can also be used for dishpan.
Rack—for setting under dish to be reheated in kettle.
Large spoon and ladle for serving.

Dishes and cutlery—may be provided at school or brought by
the children in their lunch boxes.

Draining pan (if dishes are washed at school); pot holders; dish
cloth; towels.

THE HOT LUNCH BOX

This may solve the hot lunch problem in

g EXCELSIOR The hot lunch box, an adaptation of the
; fireless cooker idea, consists of a nest of
three boxes, the middle one of wood and
the outer and inner ones of corrugated
paper. The sicsesdinis box needs to be tightly constructed and to have
a tight fitting wooden cover. Cleats of wood nailed on the inside of the
cover will keep it securely in place. Both corrugated paper boxes also
need to have good close fitting covers.

The wooden box fits snugly into the outer paper box. Layers of
folded newspaper placed between the two will make them fit more
tightly and add more insulation. The second corrugated paper box fits
snugly into the wooden box. This box is lined with packing which
surrounds the container of food.
