QUANTITY COOKING FOR 100

Tea to serve 100: 1 pound tea
5 gallons boiling water

2 lbs. cube sugar for tea or coffee
Sugar and cream for 100: 142 quarts cream for tea
2¥2 quarts cream for coffee

Quantity Cocoa:

RSET ERIE EME CRESTED, 6 cups sugar (3 lbs.)
4 cups cocoa (1 |b.)
1 tsp. salt

Mix these ingredients until smooth. Heat to boiling point and
boil 3 minutes. Then add 4 gallons hot milk.

Variations: Add a marshmallow to each cup before serving.

Yield: approximately 5 gallons. —
