THE VALUE OF FISH Fish is one of the most valuable forms of food, cox- taining the same constituents as Meat but in a more dig estible form. It contains a very high percentage of Proteins which are the most important single food constituent. They are especially rich in natural Vitamins, and contain an abund- ance of minerals necessary to vigorous health and growth. In comparison with other foods, Fish requires very littie cooking to make the flesh tender and easily digesti- ble. Fish contains Vitamin D which is vital to proper bone formation, and is sometimes known as the Sunshine Vitamin. It also conatains Vitamin A which promotes growth and enables the body to resist disease. Calcium, Phosphate, Iron, Copper, Iodine and Sulphur are some of the more important Minerals needed by both young and old for the development, growth and maintenance of bone structure.
