176 British Columbia Women’s Institutes OATMEAL MACAROONS 4 cup sugar 1 tsp vanilla 14 cup brown sugar 1 banana, mashed Y% cup melted shortening Y% tsp soda 1 egg 1 cup sifted flour Yg tsp salt 2 cups rolled oats 4 cup cocoanut Combine ingredients in order given. Drop from teaspoon on greased baking sheet. Press down with fork. Bake in a moderate oven 350° for 12 to 15 minutes. OPEN FACE SHORTBREAD DAINTIES ¥g cup butter 1 cup sifted flour Y4 cup icing sugar 4 tsp baking powder 3 tbsp water 1 tsp vanilla Cream butter, sugar, water and vanilla. Beat well, then mix in thoroughly other ingredients. Roll out dough and cut in circles to fit small muffin tins. Place in tins, prick with fork and bake in moderate oven 350° to 375° for 10-15 minutes or until lightly browned. When cool top with favorite jam or jelly or a tsp. apple sauce and whipped cream. CHOCOLATE BROWNIES Y4 cup butter Y% cup chopped walnuts 1 cup white sugar 2 eggs 14 cup flour 2 oz. unsweetened chocolate Add butter to melted chocolate. Mix well, then stir in sugar. When well mixed add well beaten eggs. Add flour—beat to a smooth batter then add nuts spread in a fairly thin layer in a greased shallow pan. Bake at 350° for 25 minutes. When removed from oven this mixture will appear to be soft and rather under cooked. Mark off in squares while warm. Let stand in pan until they harden; as they cool they will look and taste like choco- late fudge. TO REPAIR LINOLEUM If you haven’t any matching linoleum and the holes are not too large, fill the holes with a mixture of finely chopped cork and liquid glue. When this mixture has hardened, smooth down by rubbing with emery paper. Paint in matching color and design.
