MISCELLANEOUS ORANGE ICING 14 cup butter > tablespoon grated orange rind 2 tablespoons flour * 4 cup orange juice 1'% cups sifted icing sugar Melt the butter, add flour and orange juice and bring to boiling point and cook for one minute, stirring constantly. Remove from heat and add sugar. Place saucepan in pan of cold water and beat icing until thick and smooth. Add rind. If icing is too thick add 1 tablespoon orange juice or boiling water. CRUSHED PINEAPPLE FILLING (for tarts, cake, jelly roll or as a topping on ice cream) 2 tablespoons cornstarch 2'%4 cups crushed pineapple Yo cup sugar 1. tablespoon butter 4 teaspoon salt 1 tablespoon lemon juice Combine cornstarch, sugar, salt and pineapple, and cook until clear, stirring constantly. Continue cooking until there is no taste of raw starch. Remove from range and add lemon juice and butter. MARMALADE (Made in a Pressure Cooker) Wash oranges, thinly slice the fruit and cut each slice in quarters. Measure 2 cups and put in pressure cooker. Prepare % cup lemon slices in the same way and add to oranges with 31% cups water. Bring up pressure and cook for 3 minutes at 15 pounds. Reduce pressure to zero by holding cooker under cold water tap. Do not let water run on pressure gauge. Remove gauge and cover and add 3% cups sugar. Boil fruit and juice briskly uncov- ered until mixture thickens—approximately 20 minutes. Pour into sterilized glasses and when cool seal with paraffin. HABITANT PEA SOUP Soak overnight 2/3 pound of dried whole yellow peas. Drain, rinse and bring to boil in 2 quarts cold water. Add 1 large carrot finely diced, 2 onions chopped, 1 tablespoon salt and 14 teaspoon pepper. Simmer until the peas are tender—about 2 to 3 hours. Add % pound salt pork which has been scalded and cut in small pieces. Cook for 1 hour longer. Add more water if necessary. Skim off any outer shells of the peas which float to the top. Serves 8 to 10. The B.C.
