CAKE FILLINGS AND ICINGS. DATE FILLING 11% lbs. dates. Water. 1 tbsp. sugar, Wash and stone dates. Cut into pieces. Nearly cover with water. Cook slowly until the water is evaporated. Stir frequently. BOILED ICING 1 c. sugar. 1 egg white. 1/3 c. boiling water. 1 tsp. vanilla. Boil sugar and water together until syrup threads. Pour slowly on to the stiffly beaten white. Flavour. Beat until ready to spread. Note — To make Chocolate Boiled Icing add sufficient melted chocolate to obtain the right colour. CHOCOLATE ICING (Uncooked) 1 oz. chocolate or 14, tsp. vanilla. 14 c. cocoa. 11% ¢c. icing sugar. 14 ce. milk. ; Melt chocolate over hot water. Add hot milk. Stir until smooth. Cool and stir in sifted sugar until of consistency to spread. ORANGE ICING Orange juice. Finely grated orange rind. Sifted icing sugar. Beat well together. BUTTER ICING 114 tbsp. butter. 1 tsp. vanilla. 2 tbsp. hot water. 1 tbsp. cocoa (if desired). Enough sifted icing sugar to spread easily. Beat well together. 34 -
