22 FRIENDLY CIRCLE—1949 Blitz Cake 4 cup each butter and sugar, 4 egg yolks, lc. flour, 1 tsp. b. powder. Bake in moderate oven. Let cool then cover with merangue after the filling has cooled. Filling: 1 lemon, lc. sugar, 1 c. water, 1 egg, 1 tbsp. butter, 2 level tbsps. corn- starch. Merangue: 4 egg whites, 34 c. sugar, % tsp. cinna- mon, sprinkle with nuts. —Alice Jarnagin. Burnt Leather Cake lec. br. sugar, %c. boiling water. Put brown sugar in heavy frying pan and carmel till a dark brown, stirring all the time. Add % cup boiling water. Let cool. 1% c. white sugar, 1% c. butter, 3 eggs, 1 c. water, 2% c. flour, 2 tsps. baking powder, 1 tsp. vanilla. Cream butter and white sugar, add volks of eggs, water, flour and 3 tbsps. caramel syrup, add beaten whites of eggs last. Bake in moderate oven in shal- low pan. Icing: Icing sugar, butter and enough caramel syrup to color light brown. —Mrs. I. Watt. Chocolate Fudge Cake 2c. sifted flour, 3 tsps. baking powder, % tsp. soda, ™%4 tsp. salt, %c. butter, 1 c. sugar, 2 eggs, 3 sqs. Baker’s un- sweetened chocolate melted, 1% c. milk, 1 tsp. vanilla. Sift flour, b. powder, soda and salt three times. Cream butter and sugar, add egg yolks and chocolate, then flour and milk alternately, add vanilla. Fold in egg whites beaten stiff. —Mrs. F. Watt. Sponge Cake 1 c. sifted cake flour, %4 tsp. salt, 5 egg yolks, % lemon, grated rind and juice, 5 egg whites, 1 c. sifted sugar. Sift flour, measure, add salt and sift four times. Beat egg yolks till thick and lemon colored, add lemon juice and rind and beat very light. Beat egg whites until stiff and fold in sugar, a small amount at a time, then yolks and flour. Bake in un- greased tube pan about 1 hour at 325 d. —Mrs. F. Watt. Lazy Daisy Cake To 2 well beaten eggs add 1c. sugar slowly, 1 c. sifted flour, 1 tsp. baking powder, salt. Mix together and hea: about 2 mins. Add 1 tsp. vanilla and % c. boiling milk in which 1 tbsp. butter has been melted. Beat well and pour into square cake pan. This is a very thin batter. Bake at 350 degrees till cooked. As soon as cake is taken ‘from oven pour on topping and sprinkle with cocoanut. Replace in oven to brown. Topping: Bring to boil 5 tbsps. brown sugar, 3 tbsps. butter and 2 tbsps. milk. — Betty Anderson.
