CHEESE SOUFFLE — Annie Basham Temperature 300° for I. hour 195 minutes TV4 e¢ butter Dasti ; pepper i/ © flour 1/2 lb mild cheddar cheese lL ¢ milk 4 egg yolks 1/4 tisp salt | 4. egg whites beaten stiff Dash. cayenne Melt butter in saucepam over medium Heat, stir im flour, slowly add milk, stir until thick and smootli. Add salt, cayenne, vebper and thinly sliced cheese. Stir until cheese iss melted and sauce is smooth. Remove from heat, add a little of the hot mixture to egg yolks, ther sti yolks’ into cheese mixture, Cool slightly. Fold im stiffly beaten egg whites. Pour into 2 quart casserole and bake in slow over until 4a knife comes out clean. Serve immediately with a cream sauce and salad. Serves 6
