MERINGUE SHELLS 3 egg whites a tsp. salt Y% tsp. cream of tartar 3%4 cup granulated sugar | W% tsp. vanilla Beat egg whites with salt until foamy. Add cream of tartar and beat until stiff. Beat in sugar, a tbsp. at a time. Fold in van- illa. Shape meringue into 6 shells on baking sheet covered with paper. Bake in very slow oven (275° F.) 1 hour. Cool. Re- move carefully from paper and fill each shell with any desired filling. (Whipped cream and a peach half is delicious for an in- dividual dessert.) Add orange rind and juices. Sift flour, salt and baking powder, mix all. Chill. Roll dough thin and cut with round cookie cutter and doughnut cut- ter the same size.
