Hoy TO OPEN OYSTERS Before opening oysters, scrub the shells clean under cold, running water, using a brush. It is important when doing this not to let the oysters stand in water. To open, hold each scrubbed oyster with the deep half of the shell down. Insert a strong blunt oyster knife between the shells near the hinge and with a twisting motion pry the shells apart. When performing this operation, it is wise to hold the oyster in a folded cloth or to wear a heavy glove just in case the knife slips. Once opened, slip the knife between the shells and sever the muscle which holds the two together. Also sever the under muscle holding the oyster to the shell. In doing this, take care to retain as much of the delicious, salty-flavoured juice as possible. If not serving the oysters on the half shell, drain them and strain the juice to remove any particles of shell.
