POTATO & SAUSAGE COMBINE

Peel about 1/2 dozen medium-sized
potatoes as number required. Core
out the centre and place in boiling
water for 5 minutes. Remove, dry
and insert a sausage in the centre.
Roll in salad dressing and then in
finely crushed cornflakes. Sprinkle
with paprika. Place on rack in oven
and bake for 3/4 - 1 hour at 350° -
375°

CORN SAUSAGE CASSEROLE

eggs, well beaten
1/2 cups cream corn
cup soft bread crumbs
lb. sausage meat
tsp. salt
1/8 tsp. pepper

Pour into greased round deep 8"
casserole. Spread catsup over top.
Bake in pan of water 1" deep at
350° for 1 hour.

SATURDAY NIGHT CASSEROLE

lb. sausages or

tin luncheon meat, cut up
tin red kidney beans

tin corn

tsp. dry mustard

tbsp. vinegar

tbsp. brown sugar

tin sliced pineapple
(reserve juice)

Pan brown meat, pour off fat. Add
vegetables and pineapple and place
in casserole. Mix together mustard,
vinegar, brown sugar and pineapple
juice and pour over first mixture.
Top with bread crumbs or potato
chips. Bake about 25 minutes at
350";

SAUSAGE~APPLE CASSEROLE

Cut unpeeled anples into wedges and
place in bottom of greased casser-
ole; arrange pork sausage links over
them; sprinkle with brown sugar and
bake 45 minutes in a moderate oven.
Serve with baked potatoes and salad.

MYSTERY PACKAGE DINNER
(In Aluminum Foil)

Trim all the fat from lamb chops or
round steak. Brown in minimm of fat.
In centre of a square of aluminum
foil, place individual portion of
meat, 1/2 green pepper (optional),
1/2 tomato, 1 onion, 1 potato and
l carrot. Season with salt, pepper
and, if desired, Accent. Bring
opposite corners of foil together,
making a compact package. Place
package on a cookie sheet. Bake in
a moderate oven 350° for 2 hours.
Remove from oven and place package
on serving plate.

(For variation, slices of eggplant.

TUNA & COTTAGE CHEESE CASSEROLE

2 eggs

1/2 tsp. salt

2 tbsp. butter

1/2 cup dry bread crumbs

1 cup tuna, flaked

1/4 tsp. pepper

2 cups cottage cheese

3/4 tsp. celery salt

1/2 tsp. Worcestershire sauce

Beat eggs slightly and combine with
tuna, cottage cheese, seasonings,
and half of bread crumbs. Pour into
greased casserole and top with re-
maining crumbs and dot with butter.
Set in pan of hot water and bake in
moderate oven 375° for 35 minutes.
