59 FESTIVE JEWEL BARS Joan Feenstra BASE: 3 ce flour 1 ce butter | 2 tsp. baking powder 2 eggs 1 ce sugar | 2 T. milk TOPPING: 1 1/4 ce. sliced almonds 1 1/2 tsp. brandy 1 1/4 ce. mixed candied fruit 3 eggs, beaten 3/4 ce raisins 1/3 c. sugar 1 1/2 tsp. vanilla Mix base ingredients and press on a cookie sheet and bake | at 375° for 15 minutes. Combine topping ingredients and spread over base. Return to oven and bake 15 minutes longer. Cool and cut into bars. | | BANANA ENERGY BARS Mrse Le DeVries 3/4 ce soft butter 1 1/2 c. mashed ripe bananas, 3 | 1 ce packed dark brown sugar 4 ce uncooked oats 1 egg 1 c. raisins 1/2 tspe salt 1/2 ce chopped walnuts | Cream butter and sugar until light and fluffy. Beat in egg, salt and bananas. Stir in remaining ingredients. Turn into greased 9 x 13 inch baking pan. Bake in moderate oven | 40 to 45 minutes. Cool and cut into squares. NANAIMO BARS Jane DeVries 1/2 c. butter 1/4 ce. butter | 1/4 c. sugar 2 T. vanilla instant pudding 1/3 ce. cocoa powder 1 tsp. vanilla 3 Te. milk | 1 egg 2 ce icing sugar : 2 Ce graham wafer crumbs 3 OZe semi-sweet chocolate 1 ce shredded coconut 1 T. butter —t 1/2 ce. chopped walnuts - Melt 1/2 cup butter in saucepan. Blend in sugar, cocoa, vanilla, egg, graham wafer crumbs, coconut and walnuts. Press into 9 inch square pane Cream 1/4 cup butter, blend in instant | pudding, milk and icing sugar. Spread over crumb mixture. Chill. Melt chocolate and butter. Spread on chilled mixture. Chill. | Cut into bars. |
