SPICE CHIFFON CAKE Measure and sift together Make a well and add in order: into mixing bowl: 4% cup cooking oil 1 cup sifted flour 3 unbeaten egg yolks ¥%4 cup sugar ¥ cup cold water 1% tsp. baking powder Beat with spoon until 2 tsp. salt smooth. % tsp. cinnamon Measure into large mixing “4 tsp. nutmeg bowl: % tsp. allspice 2 cup egg white (4) % tsp. cloves. 44 tsp. cream of tartar. Whip until whites form very stiff peaks. Pour egg yolk mixture gradually over whipped egg whites, gently folding with rubber scrap- er just until blended. Do not stir. Pour into ungreased pan immedi- ately and bake in a 350 deg. F. oven for 50 minutes. Creamy Nut Icing for Above Cake Melt in saucepan % cup shortening, remove from heat. Blend in 2% tbsp. flour, %4 tsp. salt. Stir in slowly % cup milk. Bring to boil, stirring constantly, boil 1 minute. Mixture may curdle but this does not matter. Stir in % cup brown sugar. Remove from heat. Stir in 2 cups sifted icing sugar. Set saucepan in cold water and beat until of spreading consistency. Stir in % tsp. vanilla and % cup nuts, coarsely chopped. MRS. F. R. YOUNG. QUICK LOAF SPICE CAKE 1% cup butter 1 tsp. cinnamon 14% cups light brown sugar % tsp. nutmeg 2 eggs Y% tsp. cloves % cup milk 1 tsp. vanilla 2 cups sifted flour 1 cup seedless raisins. 3 tsp. baking powder Place all ingredients in a bowl, except raisins. FEATHER SPICE CAKE 22 cups flour % cup shortening 22 tsp. baking powder i. :‘cup’ sugar 1% tsp. salt 2 eggs, unbeaten 1 tsp. cinnamon ¥a cup molasses Y tsp. mace ¥% cup milk. Y% tsp. cloves Cream shortening and sugar, add eggs, one at a time, beat, then add molasses then flour mixture and milk alternately. Bake in 8 inch layer pans, moderate oven for 25 - 30 minutes. MRS.
