HOMEMADE PORK AND BEANS 2c. or 1 lb. beans 2 round Tbsp. brown sugar 1/4 lb. slab bacon (cut up) 1c. tomatoes, canned or fresh 2 onions, medium or salt large Soak beans overnight. Drain. Pour hot water on beans to cover. Add other ingredients. More brown sugar and tomatoes may be added, if desired. Add more water as needed. Bake 2 to 3 hours in a mod- erate oven in a covered casserole. It is best to use a cast iron Dutch oven. Mrs. Henry K. Reimer JIFFY MEAT SAUCE 1/4 c. salad oil or 1 c. water melted shortening 1 tsp. salt 3/4 c. chopped onions 1 tsp. sugar 2 8-oz. cans tomato sauce 1/4 tsp. pepper 3/4 lb. ground beef 2 tsp. Worcestershire sauce 1 6-oz. can tomato paste 1/2 tsp. garlic salt Heat oil or shortening in heavy skillet. Add onions and meat; cook over low heat, stirring frequently, until meat is lightly browned and crumbly. Add tomato sauce and paste, water, salt, sugar, pepper, Worcestershire sauce and garlic salt. Simmer over low heat, stir- ring occasionally, for about 20 minutes. Makes about a quart. Delicious to serve on noodles, spa-' ghetti, or rice. Mrs. Fred Witzke LEFTOVER MEAT DISH (Good especially where there are small children.) leftover cold meat (any variety) To about 3 cups ground cold meat, add: 1 c. gravy (substitute less 1 small onion water if you have no pepper and salt gravy) Add a little lard if the meat is not fat.
