Stir in egg yolks, then fold in beaten egg whites. Bake 40' minutes in a moderate oven. Serve hot with whipped cream. May be kept and steamed later. fim, Lemon Slices 22 graham wafers Y, ec. fruit sugar 14, c. soft butter Roll wafers very fine. Mix sugar and butter until mixture forms coarse crumbs. Reserve a half cup of this and pat remainder into a well-greased shallow pan and bake 8 to 10 min. in moderate, 350 deg. F., oven. Filling : 3 eggs 1-3 c. flour Juice 1 lemon ¥%, c. granulated sugar 3 T. water Beat egg yolks, add sugar and flour mixed together. Add water and lemon juice and cook over hot water until custard is thick and smooth. Cool and spread over baked cake. Beat egg whites until stiff, add 5 T. w-sugar and continue beat- ing until meringue is formed. Spread over custard filling and sprinkle with 1/7 c. of crumbs which were reserved from first part. Return to oven and bake at low temperature, 325 deg. F., until meringue is delicately browned, about 20 minutes. Cut in slices to serve. Pineapple Upside Down Cake Y, ce. butter 34 c. sugar | 2 eggs ¥% ec. milk 2 c. flour 2 t. b-powder Grease pan for baking. Put 2 T. butter and 1 c. brown sugar in pan and heat until sugar dissolves. Add as many slices of canned pineapple as pan will hold. Next, mix cake batter by cream- ing butter, add sugar and cream again. Add eggs. Add milk alternately with flour. Lastly add baking powder. Pour into greased pan over the slices of pineapple and bake in oven—375 deg. F. About 45 min. Apple Dumplings ~ Roll out pastry dough in rounds about the size of fruit plates. In the centre of each, place a pared and cored apple. Sprinkle apple with a mixture of sugar, cinnamon, and a few grains of salt, and dot with butter. Lift edges of dough and press together. Bake in greased muffin tins in a moderate oven (350 to 375 deg. F.) for 30 min. Serve hot with hard or liquid sauce. Q 2 64
