DATE-OAT CAKE Dorothy Webster lc. quick cooking rolled oats 3 eggs 1-1/2 c. dates, cut up 2c. sifted ali-purpose flour 1-3/4 c. boiling water 2 tsp. baking powder 1 c. firmly packed brown sugar 1-1/2 tsp. salt lc. granulated sugar 1 tsp. baking soda 3/4 c. shortening 1 tsp. cinnamon Put dates and rolled oats in large bowl. Pour boiling water over them and let stand 20 min. Cream shortening and sugars. Add eggs, one at a time, beating well. Stir in rolled oats—date mixture. Add sifted dry ingredients. Spoon into 13x9x2" pan lined with wax paper. Bake in moderate oven 350F for 59 min. or until done. When cool frost with lemon-flavoured butter icing. Optional - Add 1/2 to 3/4 c. chopped walnuts with dry ingredients. Ice with lemon icing if desired, but no frosting is necessary if for lunch boxes.
