1% cup fresh grated cocoanut. 14% teaspoons baking powder sifted with 5 cups flour. 2 cups white sugar. 1 lb. white sultana raisins. 1% |b, cherries, chopped coarsely. YY |b. light colored candied peel chopped fine. 9 eggs, pinch of salt. 2 tablespoons milk, if required. Cream butter with wooden spoon until soft and creamy. Add sugar gradually and beat well. Add eggs, well beaten, half number at a time, to butter and sugar mixture and beat well. Mix dry ingredients together. Cover fruit with a little flour. Add flour and fruit alternately, a little ata time and beat thoroughly. Mixture should be stiff but if necessary add 2 tablespoons milk. Line cake tin with two thicknesses of buttered brown paper. Put brown buttered paper on top of pans. Put pan of water in oven underneath cake pan and steam 1 hr., then take out water and paper off top of cake and continue to cook in slow oven till cooked through. —Mrs. W. B. Robertson. WHITE FRUIT CAKE. 1% cup butter. 1 cup fine sugar. 1°4 cups Swansdown Cake flour. 1 teaspoon baking powder. 1% teaspoon salt. 2 tablespoons milk. 34 cup chopped almonds. °4 cup shredded cocoanut. 1 cup sultana raisins. % teaspoon each of almond and vanilla extract. » egg whites, beaten. Cream butter, add sugar gradually, sift flour, baking powder and _ salt three times. Add gradually to butter and sugar. Beat well, add fruit, nuts and extracts, fold in egg whites. PINEAPPLE FRUIT CAKE. 14 lb. almonds. 1% |b. butter. 1144 lbs. sultanas. 31 6 eggs. ™ |b. cherries. 4 lb. white sugar. 1% lb. orange peel. 2 good cups flour. 1 small tin or 1 cup crushed pine- apple. Mix in usual way, bake in fairly slow oven for about 1% hours. This cake does not call for baking powder or soda. —Mrs. D. Quiggin. JUBILEE FRUIT CAKE— UNCOOKED tin Nestle sweetened condensed milk cups chopped dates. cups chopped raisins. cup currants, cups almonds. cup walnuts. cup mixed peel. cubes candied pineapple. cups graham wafer crumbs. cups colored marshmallows, cut fine 4 tablespoons Maraschino cherries, cut fine. 4 teaspoon salt. YW teaspoon nutmeg. 1 teaspoon cloves. VY teaspoon allspice. 14 teaspoon cinnamon. Roll graham wafers fine, add salt and spices to dry crumbs and mix, then add other ingredients. Mix thoroughly with condensed milk. Put in an oblong mould lined with wax paper and let stand at least two days. This cake will slice just the same as the ordinary cooked fruit cake. Cake weighs approximately 6 lbs. —Mrs. W. R. Pottruff. ID DSS & DO DD = QUICK FRUIT CAKE. 14 graham crackers. 34 teaspoon baking powder. Y cup mince meat. 1/3 cup white sugar. 4 tablespoons butter. 3 egg yolks, beaten. 3 egg whites, beaten stiffly. Crackers should be crushed well and mixed with baking powder. Then add sugar, softened butter, egg yolks and mince meat. Mix well and fold in whites. Bake in greased pan in moder- ate oven 350 degrees for 35 or 40 min-
