rHE MANITOBA HEALTH COOK BOOK GINGERBREAD Gingerbread 2 c. flour 2 beaten eggs ly, ¢. molasses Y, ¢. boiling water Y, ¢. sugar YZ t. salt 1-3 ¢. melted 1 t. soda 1 t. b-powder shortening 1 t. ginger Cream shortening and sugar, add beaten eggs, molasses and salt. Sift flour with b-powder and ginger. Dissolve soda in boiling water and add to first mixture. Add flour mixture and mix well. Bake in well-greased square loaf pan in moderate (350 deg. F) oven about 40 min. Tutti Frutti Gingerbread Add 1 c. chopped seeded raisins to gingerbread recipe. Bake in 2 layers in 375 deg. F. oven about 25 min. Fill and frost with Tutti Frutti frosting. Raisin Gingerbread 1 egg 1 ¢. raisins , c. molasses Ye. milk Y, ce. sugar 4 ec. butter 1 t. salt . 134 e«. flour 1 t. cinnamon 14 t. cloves 2 t. ginger ' 2 t. b-p. Y, t. soda Cream butter and sugar, add egg well beaten, add molasses, milk, spices, etc. Flour raisins and add to mixture. Sift b-powder with flour. Dissolve soda in a little milk. MAdd remaining ingredi- ents to mixture, mix well and bake in moderate oven 40 min. Molasses Cake ly, ec. w. sugar 2 eggs 1 t. ginger 1 ec. molasses 24% c. flour 2 t. soda Ye. butter © 1 t. cloves 1 ec. hoiling water 1 t. cinnamon Cream butter, sugar. Stir in molasses. Mix and sift flour, spices and salt. Add half to mixture. Stir until smooth, add boiling water with soda dissolved im it. Stir till smooth. Add remaining dry ingredients. Mix smooth, add eggs well beaten. Bake 30 minutes in moderate oven. Soft Gingerbread 3 c. sifted flour 1 ¢. sour milk 1 c. b-sugar 1 ¢c. corn syrup 2-3 ec. butter 2 eggs (unbeaten) 1 t. soda (heaping) 1 t. ginger 1 t. allspice 1 t. nutmeg 1 Ib. raisins (chopped) Cream butter and sugar, add syrup and spice, then eggs and lastly milk and soda and flour. 110 |
