FAVOURITE CHOCOLATE CREAM PIE 3 squares Bakers unsweetened chocolate 1/2 tsp. salt 2 1/2 cups milk 2 egg yolks - beaten 1 cup white sugar 2 tsp. butter 6 tbsp. flour 1 tsp. vanilla 2 egg whites 4 tbsp. sugar Add chocolate to milk and heat in double boiler. When chocolate is melted, beat with electric mixer till blended. Combine, sugar, flour, salt, add gradually to chocolate mixture and cook till thickened, stirring constantly. Then continue cooking 10 mins. stirring occasionally. Pour small amount of mixture over egg yolk, stirring vigorously. Return to double boiler and cook 2 mins. longer. Remove from | boiling water, add butter and vanilla. Cool. Turn into 9” pie shell. Beat egg whites till foamy. add sugar, 2 tbsp. at a time. Continue beating till mixture stands in peaks, Pile lightly on filling. Bake 350° - 15 mins. - Mi. Kirk 16 2 CRUST LEMON PIE FILLING MIX : | 1 1/4 cups sugar 1/8 tsp. salt 2 tbs. flour Blend in 1/4 cup soft butter. mixing thoroughly with a spoon, Add 3 well beaten eggs. Grate 1 tsp. lemon and cut into paper thin slices. (about 1/3 cup slices), Add 1/2 cup water lemon rind & slices to sugar mixture. Bake at 400° for 30-35 mins.
