Eileen Fensom CARROT CAKE 3 c. sifted all 2c. sugar purpose flour 2 tsp. vanilla 2 tsp. baking powder 1 1/3 c. salad oil 2 tsp. baking soda 3 c. finely grated carrot 1 tsp. cinnamon 1 c. finely chopped 4 eggs walnuts Combine flour, baking powder, soda and cinnamon in a bowl. Mix lightly with a fork. Beat eggs until they are light and lemon colored. Gradually add sugar, beating all the time. Continue beating until mixture is very light and fluffy. Add vanilla.
