BEEFSTEAK PIE

Brown in 4 tbsps. melted shortening
2 medium onions, sliced
Remove onions from pan.
Cut into small cubes
144 Ibs. round steak
Mix with
flour
Sprinkle with
salt and pepper
Brown in the melted shortening.
Add
2!'2 cups boiling water
1 tsp. Worcestershire sauce
cooked onions
Cover pan and simmer until meat is tender, about 1 hour.
Add
2 cups diced raw potatoes
Cook 10 minutes.
Place mixture in a baking dish and cover with a crust of
pastry
Bake in a hot oven 450° for five minutes, reduce to 350°
for 30 minutes.

ROUND STEAK

Mix together
flour
salt and pepper
Dredge in the flour mixture
2 Ibs. round steak cut thick
Brown in a little hot fat in a frying pan.
Spread with
thick condiment sauce
Cover with
2 onions, sliced
Ya cup green relish

br 1 small green pepper, seeded and chopped
4 cup olives, chopped
or Ya cup diced celery

2144 cups canned tomatoes
Cover closely and simmer very gently until the meat is
tender (about 2 hours). Season during cooking with
salt and pepper
Add water if necessary. When meat is cooked, make a
gravy of the liquid and pour over the steak.
