apteoA Wer | Your Cakes If you haven’t a reliable oven, or are spending your holiday at a summer camp, you can still bake lovely cakes on top of the stove by using your pressure cooker. Cake ‘mixes’ are ideal. PRESSURE METHOD: All cakes baked in pressure cooker are done with the lid on but without the separate gauge on or the valve down. The cooker must be well greased. Cooker should be hot when the cake batter is poured in. The lid is then put on, and the cooker placed on low or medium-low fire for the entire cooking time. When steam starts to appear from the vent pipe (usually about 40 minutes), start timing your cooking. The average cake will take 20 minutes after steam appears. Chocolate Cake (Ingredients at room tempera- ture). Measure into a mixing bowl: 1% cups cake flour 14% cups sugar Y% cup shortening 1 teaspoon salt 1 teaspoon soda 2 squares melted chocolate 34 cup milk Beat vigorously by hand or beater for 2 minutes. Stir in % teaspoon double acting (1% tea- spoons other) baking powder. Add: % cup milk 2 eggs, unbeaten 1 teaspoon vanilla Beat by hand or mixer for 2 minutes longer. The batter will 5 be smooth and thin. Bake as above. Orange Sponge Cake 1 cup cake flour 1 teaspoon baking powder Few grains of salt 3 eggs l cup sugar 7 tablespoons orange juice 1 teaspoon orange rind 1 teaspoon butter Sift together three times the flour, baking powder and salt. Beat eggs until very light and fluffy. Add sugar gradually, beating constantly. Fold in the flour mixture quickly. Combine orange juice, orange rind and butter and beat. Add to the egg mixture. Stir until smooth. Bake as above. Boiled Raisin Cake Boil together for 5 minutes % cup raisins and % cup orange peel cut fine. Use enough water to keep from burning, and save raisin water to use in cake. Cool. % cup butter cup brown sugar egg 1 cup sifted cake flour teaspoon salt teaspoon soda teaspoon cinnamon teaspoon cloves teaspoon nutmeg % cup raisin water Cream butter and sugar and add egg. Sift spice, soda, salt and flour three times, add % cup flour and raisins and balance of flour with raisin water. Beat well. Bake as above.
