BREADS AND ROLLS KOLACH 2 pkgs. yeast 4 eggs 4 cups water 1/4 cup sugar l tsp. sugar 2 tsp. salt 4 cups flour 6 tbsp. oil 8 - 10 cups flour Dissolve sugar in 1 cup lukewarm water and sprinkle yeast over it. Let stand for 10 minutes. Combine yeast with 3 cups lukewarm water, add 4 cups flour and beat hard until smooth. Cover and set aside in a warm place for 1 to 1 1/2 hours, until sponge is light and bubbly. Add well beaten eggs, sugar, salt and oil. Work in flour to make a fairly stiff dough and knead well. Cover and put in warm place to rise until double in bulk. This should make 2 loaves. Divide dough in proportion and braid. Let rise. Brush with beaten egg. Bake in oven set at 350 F. for 45 minutes or until done. DINNER ROLLS Combine and let stand - 1 pkg. yeast 1/2 cup warm water 1/2 tsp. sugar 1/2 cup cooking oil 8 egg yolks 1/2 cup sugar 2 cups warm water, . Af/2 tee. salt approximately 8 cups flour In a large bowl, combine oil, sugar, salt, beaten egg yolks and water. Mix thoroughly. Add a little flour then soften- ed yeast. Add the rest of the flour gradually until the dough just passes the sticky stage (if mixture is slightly thin add more flour.) Knead lightly until the dough is smooth. Put into an oiled bowl, turning the dough until it is thoroughly greased on all sides. Let rise until double in volume. Shape into rolls or buns and let rise for approx- imately one hour. Bake at 375 F. for 15 - 20 minutes.
