OLD FASHIONED CRUMB CAKE 2 e¢. flour 1 tsp. baking powder 1 oc. sugar % tsp. salt 34 c. of butter or margarine 1 egg 1 ec. cut dates or raisins 1% tsp. ea. of allspice, cinnamon, 1 ce. sour milk or buttermilk and cloves. 1 tsp. soda Mix together flour, sugar and shortening, as for pastry. Take out a scant cup and put to one side. To the remaining dry ingredients, add the rest and beat well. Put in 8 x 8 inch pan, and cover top with the scant cup of crumbs. GENIUS CAKE 1 egg yolk 1% c. sifted flour \%e«. shortening % tsp. baking powder 1 c. sugar 1 tsp. vanilla % tsp. salt 3 tbsp. cocoa 1 tsp. soda 1% ec. boiling water 1%4 ee, sour milk Combine yolk, shortening, sugar, salt. Add soda, sour milk, sifted flour, baking powder, vanilla, and cocoa mixed with boiling water. Beat mixture with egg beater and fold in egg white stiffly beaten. Bake in two 8-inch greased pans for 20 minutes at 350°F. FILLING 1 tbsp. cocoa 1 tbsp. butter 1 tbsp. cornstarch 1%, tsp. vanilla 24 ¢. white sugar 1% ec. hot water 1% ¢, cold water Cook in double boiler the cocoa, cornstarch and white sugar, with water, butter, vanilla, and hot water until cornstarch is cooked. ICING 1% c, brown sugar 3 tbsp. hot water 14% ¢. white sugar 2 egg whites stiffly beaten Boil until thready the brown sugar, white sugar and hot water. Have the whites stiffly beaten. Pour mixture over egg whites, still beating, until right consis- tency to spread. When cake is put together and iced, cover with 1 square of melted unsweetened chocolate, swirled with a knife. BUTTERMILK CAKE 2 c¢, sugar 2 tbsp. nutmeg 1% e. butter 1 tsp. baking powder 2 ec. currants 1% tsp. soda 3 ec. bread flour Buttermilk. 1 tbsp. cinnamon Combine sugar, butter, currants, flour, cinnamon, nutmeg, baking powder, and soda dissolved in buttermilk, sufficient buttermilk to mix. Bake from 1 to 1% hours. BOILED CAKE 1 ec. cold water 1 tsp. cinnamon 1 ec. raisins 1 tsp. cloves 1 ec. sugar 1 tsp. baking powder 14 c. butter or shortening 2 ec. flour. Pour first six ingredients into a saucepan and bring to boiling point, then cool. When cold, stir in the sifted flour and baking powder and beat well.
