Beat again. Add pineapple juice and cook in a double boiler, stirring constantly until mixture thickens, Chill. Fold in whipped cream, Makes enough for 4 or 5 salads, CREAMY SALAD DRESSING 2 tbsp. flour 1+ cups evaporated milk 2 tbsp. sugar 1 egg slightly beaten 1 tsp. salt 1/3 cup vinegar 1 tsp. dry mustard Combine flour, sugar, salt and mustard in saucepan; gradually Stir in evaporated milk. Cook over medium heat until mixture thickens, stirring constantly. Cook 2 more minutes, Blend a little of the hot mixture into egg; return to saucepan. Cook 1 additional minute but DO NOT BOIL. Cover and allow to cool. Gradually stir in vinegar. Chill. Makes 1% cups.
