CODFISH HASH 2 cups Codfish (freshened) 3 slices fat Salt Pork Mashed Potatoes 1 Onion, chopped fine 1 cup Milk Freshen Codf'sh, add twice the quantity of mashed potatoes. Mix thorough.y and moisten with milk. Add onion (if desired). Fry out fat salt pork and remove the seraps, leaving enough fat to prevent scorching, then ~eook until well browned underneath. Fold and turn like omelet. CODFISH FRITTERS 1 Ib. Codfish "2 tablespoons cooking Fat 1 pint mashed Potatoes 14 teaspoon Salt 3 2 Eggs 14g teaspoon Pepper 3 tablespoons Milk | | Pick fish ‘nto flakes and freshen. Drain and dry. Add potatoes, eggs, slightly beaten, milk, fat and season- ings. Beat vigorously Drop by tablespoonsful into deep fat heated to 375 degrees Fahrenheit or hct enough to brown a cube of bread in 69 seconds. Drain on absor- bent paper and serve quick.y. Serves 6. FRIED COD BITS Freshen Cocfish and cut into pieces about an inch square. Dp in batter and fry to golden brown. Serve or. a toothpick. Also suggested as an hors d’oeuvre.
