Fill dish with hot milk to top layer of potatoes. Sprinkle with grated cheese. Bake slowly until tender 144 hours in a moderate oven—350°F. POTATO PUFFS Y% cup flour 1 cup mashed potatoes 114 tsp baking powder 14 tsp each salt and pepper 2 eggs, beaten Mix together and drop by spoonfuls into hot fat. Salmon may be added if preferred. | POTATO SOUFFLE Take 2 cups cold mashed potatoes. Stir. into it 2 tablespoons melted butter. Beat to a white cream, before adding anything else. ‘Then put with this 2 eges whipped very light and a cup of cream or milk. Beat all well, pour into a deep dish. Bake in a quick oven until it is nicely browned. If properly mixed, it will come out of the oven puffy and delectable. SOUFFLE SWEET POTATOES Into 2 cups of boiled and mashed sweet potatoes, beat 3 whipped eggs, 1 cup milk, 2 tablespoons of melted butter, seasoning to taste. Beat hard and bake in a greased pudding dish. HARVARD BEETS 14 cup sugar — VY tsp salt | 2 tbsp flour 2 tbsp butter 14 cup water 3 cups cooked diced beets Y4 cup vinegar . Mix sugar, flour, add water and vinegar. Cook over medium heat until thick, about 10 minutes. Add salt, butter, then diced beets. Continue cook- ing 10 minutes. Serves 4 to 5. FRENCH FRIED ONION RINGS large onions Y% cup milk undiluted canned milk or fresh milk flour 1 egg, beaten breadcrumbs Peel onions and slice 44” thick. Separate into rings and soak about 15 minutes in canned or fresh milk. Drain slightly. Beat egg and add ¥% cup milk. Roll rings in flour, then egg mixture, then in crumbs. Shake gently to remove surplus crumbs. Fry in deep fat at 365° for 3 minutes. Drain on absorbent paper. ONIONS DE LUXE Prepare about a dozen small onions (golf ball size), place in pan with 2 tsp. melted butter, 1 tsp. brown sugar. Shake around to brown, add about Y% cup water and cook slowly about | hour. ‘Thicken liquor slightly.
