CREAMED FISH FLAKES, AU GRATAN 14% cups cooked flaked 1% cups hot White Sauce Codfish 3 tablespoons sharp 2 Egg Yoks Cheese 1 teaspoon Salt 1/8 teaspoon Cayenne — Pepper Pour white sauce over egg yolks in double boiler. Add flaked fish, cheese, seasonings and cook over boiling wa- ter until very hot and blended. Serve on toast. Serves four. NEW ENGLAND SALT FISH DINNER Freshen one package of Codfish. Drain. Put fish in bottom of pot, cover with potatoes cut into pieces. Add cold water to cover, bring to boil and cook until potatoes are done, about one-half hour. Pour off. Ar- range on platter and pour over ‘t a gravy made by frying eut up onions with picces of salt pork. (The onions and pork scraps may be served if desired). CODFISH A LA MODE Take a cupful of Codfish which has been picked and _ freshened. Drain. Add two cups of mashed potatoes, two cups milk, two eggs well beaten, one-half cup butter, salt and pepper to taste.
