FRUIT CAKE GEMS (Not too rich) 1 cup raisins 1144 cups Robin Hood Pre-Sifted 1 cup mixed candied fruits All Purpose Flour 14 cup chopped dates 1 tsp. salt 1 cup chopped nuts Y4 tsp. baking powder 14 cup Robin Hood Pre-Sifted Y% tsp. soda All Purpose Flour Y tsp. nutmeg Y4 cup brown sugar, firmly Y tsp. cinnamon packed YZ tsp. cloves Y cup granular sugar 4 tsp. mace 14 cup butter or shortening 1% cup fruit juice 2 eggs Maraschino cherries 2 tbsps. molasses blanched slivered almonds COMBINE fruits and nuts and dredge with 4 cup flour. CREAM Sugars, shortening, eggs and molasses thoroughly in large mixing bowl. MEASURE flour (without sifting) onto square of waxed paper. Add salt, baking powder, soda and spices. Stir well to blend. App blended dry ingredients alternately with fruit juice to creamed mixture. STIR IN fruits and nuts. FILL small cupcake liners in small muffin cups, % full. Garnish each with 14 maraschino cherry and slivered almonds if desired. BAKE at 325°F. for about 30 minutes. Remove from oven and brush tops with corn syrup while still hot. Store cooled cakes in tightly closed container. YIELD:—314-4 dozen. BOMBE GLACEE (Make several days ahead) 3 pts. lime sherbet 1, pt. whipping cream 1 pt. chocolate ice cream 2 tbsps. sugar 2 pts. raspberry sherbet SOFTEN lime sherbet sufficiently so that it can be spread with a spoon. Press it in an 8-cup round mold or bowl to make an even layer lining entire mold. Place in freezer until firm. SOFTEN chocolate ice cream slightly and press evenly against lime sherbet to make a second layer. Freeze until firm. SOFTEN raspberry sherbet slightly and fill centre cavity of mold. Freeze. TO SERVE: Unmold bombe by putting bowl in cold water for a few seconds. Run knife around edge if necessary. Invert on serving dish. Place in freezer until ready to decorate. WHIP cream and sweeten with sugar. Make rosettes on bombe by passing whipped cream through pastry tube. Keep bombe in freezer until ready to serve. Garnish with frosted grapes if desired. YIELD:—about 16 servings. 20
