- lovely to look at - delightful to eat - PINWHEEL COOKIES Temp: 375° Time: 12 mins. 4 cups sifted pastry flour 3/4 cup butter or margarine or 3 1/2 cups all purpose flour 1/2 cup sugar (granulated) 1 1/2 tsp. baking powder 1 cup lightly packed brown sugar 1/4 tsp. soda 2 eggs 3/4 tsp. salt 1 1/2 tsp. vanilla Filling: i cup pitted dates 2/3 cup water 1/4 cup granulated sugar 1 tbsp. lemon juice 1 tsp. grated lemon rind 1/3 cup finely chopped nuts few grains salt Measure into sifter first four ingredients, Sift together twice. Cream the butter, blend in sugars and beat well. Beat the eggs until thick and add to the creamed mixture, part at a time, beating after each addition, Stir in vanilla, Sift dry ingredients into creamed mixture about 1/4 at a time, combining thoroughly after each addition. Chill until firm. Put through the food chopper the dates and put them into a sauce pan and add sugar, salt and water, Cook, stirring constantly until the mixture is of soft spreading consistency. Remove from heat and add lemon juice and rind and nuts, and mix well, chill. Divide the dough into three and roll out one part at a time, into narrow rectangle of dough, about 1/8 inch thick; spread with date filling and, beginning at the narrow end, roll up like jelly roll. Wrap each roll in waxed paper, foil or one of the plastic films, Chill several hours or overnight, Cut chilied rolls of dough into slices about 1/8 inch thick and arrange well apart on ungreased cookie sheet. Bake and chill thoroughly before storing. Optional filling: 1 large jar maraschino cherries and 1/2 cup blanched almonds, Chop fruit and nuts finely and sprinkle over the rolled out dough. Add the orange rind and the beaten eggs. Mix well, Add the sifted flour and baking powder alternately with the orange juice.
