Miscellaneous FRIED RICE — Shirley Bergen 2 cups uncooked Minute Rice 1/4 cup cooking oil 3 cups water 1/4 cup soya sauce 1 package onion soup mix 1 10 oz tin mushroom bits Mix all ingredients together in a 2 quart casserole. Cover and put in oven for 1 hour at 350°. FRIED RICE — _§ Evelyn Kardashinski 4 cups cold cooked rice dash of salt 6 green onions includingtopschopped, 1 cup diced, cooked, shrimp, ham, or 1/2 medium onion pork,chicken or beef | 3 tbsps salad oil 2 beaten eggs 1 to 2 tbsps soy sauce 1/2 tsp sugar Saute rice and onion in oil over medium heat about 15 minutes or until rice is golden brown. Add meat. Pour beaten eggs over rice. Cook, stirring often, until egg is set. Mix together soy sauce, sugar, and salt. Sprinkle over rice mixture. Stir just until blended. Serves 6. COTTAGE CHEESE PATTIES — Justina Stagg 2 cups dried bread crumbs 2 cups cottage cheese 1 onion 1 cup walnuts salt 5 eggs Mix in blender for smooth mixture in order given. Then fry. SAUCE: 1/2 cup stalk and leaves of celery medium onion 1 can tomato soup 1 bay leaf 1 can water Boil, then pour over patties and let simmer in oven for 1/2 to 1 hour. LENTIL AND NUT ROAST W— Bonnie Parmele 1 cup lentils 1/2 cup oil 1/2 cup nuts 1-1/2 cups corn flakes 1 egg 1/2 tsp sage 1 large can evaporated milk 1 medium onion salt to taste Boil lentils until well done. Grind nuts and onions. Beat egg and combine all ingredients. Bake in oiled casserole 45 minutes at 350°. 63
