CORN MEAL PANCAKES 1 cup flour (sifted) 2 eggs 2 tsp. baking powder —. 2 cups buttermilk or sour milk 1 tsp. salt bi 1 tsp. soda 2 tsp. sugar tj 2 tbsp. shortening 1 cup cornmeal Sift the flour, then measure and sift again with the baking powder, salt and sugar. Add the cornmeal and mix well. Beat the eggs well and beat in the buttermilk (or sour milk) and the soda, then gradually beat in the dry ingredients. Add the shortening which has been melted and beat again. Pour the batter onto a moderately hot greased griddle or skillet. As soon as the pancakes brown on the underside and are puffed full of bubbles on top, and before these bubbles break, turn the cakes and cook on the other side. Serve with syrup. Mrs. J.
