CARROT RING 2 cups cooked mashed carrots 6 eggs, separated a tsp. salt 1 cup cream 1 tbsp. sugar 1fe tsp. pepper Beat yolks, add cream, then carrots, sugar and seasoning. Fold in beaten whites. Bake in well-buttered ring mold, which has been placed in a pan of water, ina 350° oven for 45 minutes. CANDIED SWEET POTATO 6 sweet potatoes salt and pepper 1 cup brown or maple sugar 1/4 cup water Wash sweet potatoes. Cook in water for 30 - 35 minutes. Drain, peel off skins. Make a syrup by boiling together sugar and water. Cut each potato in half, dip each piece of potato in syrup, place in buttered dish. Season with salt, pepper and bits of butter. Pour remaining syrup over potatoes and bake at 400 - 450° until brown. - Mrs. E. Baird. CORN FRITTERS 1/2 cup flour 1/2 tsp. baking powder 1 tsp. salt 1/4 tsp. paprika 1 cup corn (canned cream style) 2 egg yolks (beaten) 2 egg whites Sift dry ingredients. Add corn and egg yolks. Add stiffly beaten egg whites. Cook in frying pan, turning once. - Mrs. Eric Crossin. 116 MARSHMALLOW SWEET POTATOES 8 medium sweet potatoes 2 tbsp. butter 1/2 cup hot milk 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. paprika 1/2 lb. marshmallows Boil, peel and mash sweet potatoes. Beat in all remaining ingredients, except marshmallows. Turn into greased baking dish. Cover with marshmallows and bake in moderate oven 350° until marshmallows puff up and are a golden brown. - Edith Tait. POTATO PUFF Stir 2 tbsp. butter into 2 cups of mashed potatoes. Beat to a cream. Add 2 well-beaten eggs, 3/4 cup milk and salt to taste. Bake in a deep dish in a quick oven until nicely browned. - Mrs. E. Baird. STUFFED SQUASH Place squash half upside down in a pan and pour boiling water to 1/4" depth. Bake at 400° for 25 minutes. Turn squash cut side up and fill centre with partially cooked sausage patties. Bake until tender (25 min.) - Helen McGillivray. GLAZED SQUASH Cut squash into 3" squares and par- boil for 30 minutes. Drain and place in shallow baking pan and dribble glazing syrup over pieces. GLAZING SYRUP: Heat together 1/2 cup white and 1/2 cup brown sugar, 1/2 cup water, 2 tbsp. butter. Dribble over pieces and bake until glazed 350° for 30 minutes, basting while cooking. - Helen McGillivray.
