} | t : } ; ] ; ii al CURRANT BUN 1 cupful seeded raisins 14 teaspoonful allspice 1 cupful currants 14 teaspoonful baking soda 9 tablespoonfuls granulated sugar 14 teaspoonful cream of tartar 3 tablespoonfuls candied orange 1 cupful sifted cake or pastry rind, finely cut flour 5 tablespoonfuls chopped blanched 14 cupful bottled milk or 2 table- almonds spoonfuls evaporated milk and 14 teaspoonful ginger 2 tablespoonfuls water 34 teaspoonful cinnamon Plain pastry Speck black pepper Combine all the ingredients but the pastry and mix well. Line a shallow baking dish with plain pastry, using 1% cupfuls sifted cake or pastry flour, ’% teaspoonful salt, % cupful shorten- ing, and cold water as the basis. Arrange the filling in the pastry-lined dish. Moisten the edges of the pastry with water, then cover with top crust in the usual way. Prick all over with a fork and bake in a very hot oven of 450° F. for 10 minutes. Then reduce heat to a moderate oven at 350° F. and bake 1 hour longer. Cool and place in a covered container to “age” and mel- low for full flavor. Serve in slices. —Miss Helen S. Laing DATE MUFFINS 2 eggs 2 teaspoonfuls baking powder 114 tablespoonfuls butter 1 cupful chopped dates 114 cupfuls flour 14 teaspoonful salt and 34 tea- Yz cupful sugar spoonful nutmeg (optional) 34 cupful milk Cream butter and sugar, add yolks of eggs, milk, flour sifted with baking powder, spice, salt and dates, lastly adding whites stifly beaten.
