Crispy Liver Steaks lb. beef liver Catsup Sauce: 1 1 egg 2 7. butter or margarine lt. salt 2 T..cacsup <* 1 T. lemon juice * C. water 1 T. water 7 1 C. cracker crumbs on oe oe | Cut membranes and skins from slices of liver (1/3 inch thick is best). Wash liver under running water, dry on absorbent paper. Beat egg, add salt, lemon juice and water. Dip liver slices in cracker crumbs, then in egg mixture and again in cracker crumbs. Brown in‘hot fat. Do not overcook, Mix catsup sauce ingredients together and heat. Serve sauce and liver hot. 2. Toasty Cheese Bake | & slices bread 1 Cc. grated cheese butter or margarine l egg, slightly beaten *% 1b. ground beef 3/4 c. milk } C. chopped onion 5 t. salt 2 T. chopped celery , dash pepper 1 T. prepared mustard 1/8 t. dry mustard * t. salt Heat oven to 350°F. Toast bread, butter both sides. Cook and stir meat, onion, celery, mustard and salt until meat is brown and onion is tender. Alternate layers of toast, meat mixture and cheese in greased baking pan, 9x9x2 inches. Mix remaining ingredients pour over layers in pan. If you wish, sprinkle with paprika. Bake in uncovered pan 30 to 35 minutes. (serves 4-6)
