i ee heel a i“ oy ADVENTURES IN COOKING 175 REFRIGERATOR DATE PINWHEELS 214 cups chopped dates 3 eggs, well beaten 1 cup granulated sugar 4 cups sifted flour 1 cup chopped nutmeats VY tsp salt 1 cup shortening 14 tsp baking soda 2 cups brown sugar juice and grated rind of 1 orange Combine the dates, granulated sugar and water in a saucepan and cook over low heat until thick, about 10 minutes, add nutmeats and cool. Meanwhile, cream the shortening, add brown sugar gradually while cream- ing. Add the well beaten eggs and orange and beat well. Add the remain- ing ingredients sifted together and mix well. Divide the mixture into 2 parts and roll out each separately into a rectangle a little less than 14-inch thick. Spread each with the date filling and roll up as a jelly roll. Chill thoroughly—overnight if possible. Cut into 44-inch slices and bake 10 or 12 minutes in a moderately hot oven—400°. GINGER CREAMS 14 cup shortening Y% tsp salt 14 cup sugar 1 tsp ginger 1 small egg % tsp each of nutmeg, cloves and Y% cup molasses cinnamon 2 cup sifted flour Y% cup hot water 1 tsp soda Cream shortening, add sugar gradually. Cream well. Blend in well beaten ege, then molasses. Sift flour, salt and spices together. Stir into molasses mixture, stirring in alternately with the hot water in which the soda has been dissolved. Chill thoroughly. Drop by tsp. 2” apart on. slightly greased heavy baking sheet. Bake about 8 minutes in a moderately hot oven 400°. Cover some of the cookies, while still warm, with icing made by blending together 2 cup icing sugar, few drops of vanilla and 2 to 3 tbsp. top milk or cream. COCOANUT THINSIES Temperature 375° Time 12 minutes Makes 3 dozen 214 cups sifted cake flour 1 cup granulated sugar 1% tsp salt 2 eggs 2 tsp baking powder Y% tsp vanilla Y% cup soft shortening 114 cup shredded cocoanut Sift together first 3 ingredients. Mix until creamy shortening, sugar, eggs and vanilla. Mix in flour mixture, then cocoanut. Chill 1 hr. Form dough into 1” balls — flatten and bake. JELLY DROPS 14 cup butter or shortening 4 cup sugar 1 egg 34 cup cornstarch %4 cup flour 1 tsp vanilla 1 tsp baking powder pinch salt Mix sugar, shortening, add egg, add flour, corn starch, baking powder, and salt. Drop in small balls on cookie sheet and press with thumb, fill with any kind of jelly. Cook about 15 minutes.
