Grades and Sizes

Eggs are sold by grade throughout Canada. These grades are your
quality guide.
Grade A 1 — Grade A — Grade B — Grade C

Grade A is the top quality most commonly sold. It is divided into
five classes according to size and weight:

Extra Large-Min. wt. 27 oz. (1 lb., 11 oz.) per doz.
Large Min. wt. 24 oz. (1 lb. 8 oz.) per doz.
Medium Min. wt. 21 oz. (1 lb. 5 oz.) per doz.
Small Min. wt. 18 oz. (1 lb. 2 oz.) per doz.
Peewee Min. wt. 15 oz.

Large, Medium and Small are the sizes most commonly found on the
market.

What Size Egg is the Best Buy?

This depends upon the season and supplies. In late summer and
early fall small eggs are usually in heavy supply. Then there is a period
when the medium size is plentiful and finally the large eggs hit their
peak during the winter months.

Since eggs are actually sold by weight, cost per ounce may be
calculated to show which size is most economical. Following is a key for
determining comparative costs:

Medium eggs at % less in price than Large are equal in cost ounce

for ounce;

Small eggs which are % less in price than Large are equal in cost

ounce for ounce.

Keep Eggs Cool

Store eggs in refrigerator away from strong smelling foods.
Eggs left in a hot kitchen or car parked in the sun after a shopping
trip lose quality rapidly.
