HAMBURGERED EGGPLANT Cut eggplant into slices 1/4 inch thick. Spread each side with a mixture of the following: hamburger salt and pepper Parmesan cheese 2 egg yolks oregano Mix well together. Fry the hamburger in oil, and gently turn to brown the other side. The flavor of this is brought out more by using plenty of Parmesan cheese if you like it. After the meat is browned, stir in some tomato paste, onion and salt and pepper. Simmer gently so as not to break up the vegetables. Serve with rice, using some of the sauce for the rice. Ann Maida ITALIAN STYLE CHICKEN & SPAGHETTI Use a fairly old hen to cook with this recipe. Prepare the chicken by having it clean and cut up into serving pieces. Put in a paper bag: Ic. flour I tsp. salt some pepper Add the chicken and shake well to dredge the chicken with flour, then fry the chicken until brown, in oil. Meanwhile, make a sauce with the following: 1 small can tomato paste 2 tsp. chopped garlic (less fried onions garlic if preferred) 1/4 c. fresh parsley 1/4 c. oil (Mazola is good) Boil together with about 8 cups water. When the chicken is good and brown, put it into the sauce and turn down the heat until it is just simmering. Add 1/2 cup Parmesan cheese, and cook for about 3 hours, Less time is required if the chicken is younger, Boil a large pot of salted water and add the amount of spaghetti you need. Cook and drain. Do not add cold water. Place some spaghetti on a platter and add some of the sauce, then some Parmesan cheese, some more spaghetti and sauce, and so on, until all your ingredients are used. The chicken may be served in a separate dish, or as a trim on the spaghetti platter. Before serving, add a sprinkling of Parmesan cheese on top of the platter.
