THE IcING An excellent almond paste icing one which goes very well with my fav- orite Christmas cake, contains the fol- lowing: Three egg whites, 1 pound icing sugar, 1 pound almonds, a. dash or so of rose water. Blanch and dry the almonds a day or so before putting through your food chopper, at which time the rose water is added. Beat egg whites to a stiff froth, then work in the ground almonds and the sugar. Roll the mass into the shape of the top of your cake and place on. Press down carefully, and flatten. When the cake has received its coating of almond icing, let it stand a day before adding the usual white icing. It is well to do this, allowing the almond paste to dry out a little. And as to that outer white icing: ORNAMENTAL ROYAL FROSTING Put two chilled egg whites into a bowl with one tablespoonful of sugar. Beat well . . . and then add a second tablespoonful of sugar, continuing the beating, gradually adding sugar until the frosting gains an even spreading consistency, adding a few drops of lemon juice as it gradually thickens, beating meanwhile. Now you're ready to spread the frosting over the almond paste-covered Christmas cake. Some of the frosting may be withheld and placed in a pastry bag with fancy tube. By manipulating the tube the cake may be decorated in a professional manner — but as an alternative, and more homely method of decorating use fruits and nuts — as shown in the accompanying photograph.
