CRUMB CAKE. 14 cup butter. 2 cups flour. 2 teaspoons baking powder. 1, teaspoon salt. 2 cups brown sugar. 2 eggs well beaten. 2/3 cup sweet milk, 1 teaspoon vanilla. Method—Mix first four ingredients 28 as for pie crust, add sugar and mix thoroughly. Put aside a good half cupful of this mixture. To the re- mainder add milk, eggs and vanilla. COCOA CAKE. 1% cup cocoa. 2/3 cup brown sugar. 1 egg yolk. 1% cup sour milk. Mix the sugar and cocoa, add the milk and beaten egg yolk, cook over hot water until the mixture is thick and smooth. Remove from fire and cool. 1 cup brown sugar. 1% cup butter. 1 egg yolk. 1 egg white. % cup milk. 2 cups flour. 1 teaspoon soda. 1 teaspoon boiling water. Cream the butter and sugar thor- oughly, then add the egg yolk and beat very hard, add the cocoa mixture, making sure that it is cool. Sift the flour, then measure and sift once more, add then to the batter altern- ately with the milk. Dissolve the soda in the boiling water and add, beating it in well. Beat the egg whites stiff and fold in carefully. Turn the batter into layer cake pans. Bake in a moderate oven, 350°, about 25 minutes. Cool and ice as desired. —Adele Chalmers.
