SAUSAGE a Ia BARR 1 Ib. pork sausage 2 apples 1 large onion Salt, pepper 1 tin tomato soup Flour, curry powder Put layer of sliced onions in bottom of baking dish and place sausage on top (layer of apples in between sausages) in layers topping off with rest of sliced onion, little salt and pepper and some sugar on apples. Then pour tomato soup over all and bake in 350°F. oven for about 40 minutes (covered). Take out of oven, allow to cool slightly and take fat off top. Mix heaping teaspoon flour and half teaspoon curry powder with water to paste and add to sauce in baking dish which has been heated up to boiling point. Return to oven under top element until nicely browned. Served with rice makes nice supper dish; or with riced potatoes and Brussels Sprouts for dinner.——Courtesy Mrs. Jas. Barr. CHINESE PORK ec. chicken broth 4 ec. cooked white rice c. boiling water 2 tbsp. honey tbsp. butter 2 tbsp. soy sauce tbsp. cornstarch 1 tsp. salt 2 8 met DO DO DW c. cabbage, shredded c. celery cut in small pieces 1% Ibs. fresh pork shoulder sliced green onions, whole % in. thick. Combine chicken broth with honey and soy sauce. Stir well, pour over meat which has been placed in shallow pan. Cover and let stand 4 or 5 hours in refrigerator. Turn over once or twice. Drain meat and save liquid. Brown meat slowly in butter. Add % cup of the saved liquid. Cover and simmer about 45 minutes, adding half cup more of the liquid. Blend corn starch with remain- ing liquid and add. Cook until thickened, stirring constantly to make a smooth gravy. Lay vegetable in gravy and simmer until they are cooked. PINEAPPLE GLAZED HAM LOAF 1 Ib. ground ham 2 tbsp. vinegar 1 ec. uncooked oatmeal 1 Ib. ground beef 16 tsp. salt 1% c. milk 4 or 5 canned pineapple half 14 tsp. pepper slices 1 tsp. dry mustard 1% c. brown sugar Combine meat, oatmeal, milk, salt and pepper. Pat into loaf shape in shallow baking dish. Arrange pineapple slices on top of loaf. Bake in a moderate oven 350 to 375°F. for 1 hour. Mix sugar, mustard and vinegar and pour over top. MEAT LOAF 2 Ibs. lean meat (shoulder beef) 1 ec. bread crumbs 1% lb. smoked ham 2 eggs | Pepper and salt Mince beef and ham, mix well with crumbs, eggs and seasoning. CURRIED PORK TENDERLOIN OR VEAL CUTLETS Season pork or veal with salt and pepper and rub with curry powder. Fry to light brown, then let it simmer in the following sauce until done and serve with hot boiled rice. CURRY SAUCE Add a little butter to the pan in which the meat has been cooked.
