WACKY CAKE | Nancy Scott | Sift together in an ungreased pan, 8x8~-inches: 11/2 c. flour 1 tsp. baking powder | 1 c. white sugar 1/2 tsp. salt 1 tsp. baking soda 4 scant Tbsp. cocoa Mix well, then level off. Make 3 holes with a spoon. Into first | hole, put 1 Tbsp. vinegar, second hole, 1 tsp. vanilla, third hole, 5 Tbsp. oil. Pour over all 1 cup warm water. Blend until flour mixture has | disappeared. Bake at 350 degrees, 30-35 minutes. ECCLES CAKES , Brian Wadsworth 1/2 1b. flour 1/2 lb. margarine 1 pinch of salt Currants Mix flour and salt, then take 1/3 of this flour and mix it with the 1/2 lb. of margarine. Mix the remaining flour to a soft dough with water. The two doughs should be of equal consistency. Roll out the dough of margarine and flour into a long rectangular shape. Piace the dough of flour and water in the middle, fold the outer dough in three over it, seal the edges, give 1/2 turn to the right and roll out into a long strip. Fold dough in four, half-turn and | roll out again. Continue this until the dough has had 5 rollings. ) Cut the dough into rounds (about 4-inches) and fill the centres with currants and sugar. Purse the dough over the currants and flatten, sealing them inside. Brush the cakes with beaten egg on the outside, and roll in sugar. Cut 3 slits in the top of the cakes, _ then bake in a hot oven (450 degrees) for about 10 minutes. Makes about 1 dozen. This recipe originated in the town of Eccles, Lancashire, England.
