Cook potatoes until soft, drain well, mash smooth, add butter, egg, pepper and fish. Beat well and form into balls. Fry in deep fat and serve very hot. C | CREAMED COD 2 cups cooked cod Cream sauce: 1% cups milk 1 teaspoon salt 1% tablespoons butter Pepper, cayenne, chopped 1% tablespoons flour parsley, onion juice , Arrange alternate layers of flaked fish and sauce in baking dish. Cover with bread crumbs and brown in oven. DEVILED CRAB Remove the meat from a crab, and clean and wash the shell. 5 tablespoons cracker crumbs 2 tablespoons butter 1 tablespoon mustard 1 tablespoon vinegar Yo cup milk Salt and pepper to taste 2 eggs 1 teaspoon Worcestershire sauce 4 Beat the eggs and add to the crab meat with all the other ingredients except the mustard and milk, which should be rubbed to a paste and added last of all. Fill the crab shells, sprinkle with cracker crumbs, butter and paprika, and bake for 5 or 10 ‘minutes. Serve in the shell. FINNAN HADDIE DELMONICO 1 Ib. fillets finnan haddie 1 cup green peas Y2 doz. new potatoes 2 hard boiled eggs Cook finnan haddie well, add to 2 cups medium cream sauce. Cook potatoes and peas separately. Pile peas in middle of the platter and the potatoes around it. Pour the creamed fish over the whole. Cut the eggs in rings and garnish the edge of the platter; dash a little red pepper over, and lay on a few small bits of pimento. RICE AND SALMON LOAF Line a slightly buttered pan with warm steamed rice, having walls three-fourths inch thick. Fill centre with cold boiled salmon, flaked and moistened with egg sauce. Cover with rice, set in a pan of hot water, cover with buttered paper and bake one hour at 350 degrees. Turn on a hot platter, pour egg sauce around and garnish with slices of hard boiled egg and parsley. EGG SAUCE: 5% tablespoons butter Y2 teaspoon salt 3 tablespoons flour Yg teaspoon pepper Yolks of 2 eggs Lemon juice 1% cups hot water Melt 22 tablespoons butter and blend with the flour; add water gradually while ‘Stirring constantly. Bring to boiling point and add the remainder of ingredients. SALMON LOAF 1 can salmon 1/3 cup crumbs, bread or eracker 1 tablespoon butter 1 teaspoon chopped celery or 2 eggs, lightly beaten celery salt (if desired) Salt and pepper 1 teaspoon lemon juice 4 tablespoons milk or cream Bake in moderate oven 40 minutes.
