ADVENTURES IN COOKING 117 Salads & Dressings LAYERED SALAD LOAF ] pkg lemon-flavored jelly powder 6 tbsp pineapple syrup 14 cups boiling water 1 tbsp sugar . 4 oz. pkg white cream cheese Y% tsp salt 1 pkg lime flavored jelly powder 2 tbsp lemon juice 14 cups boiling water 1 cup drained crushed pineapple Dissolve lemon jelly powder in 11% cups boiling water. Cool to room temperature. Add softened cream cheese, beat with rotary beater until blended. Pour into lightly-oiled loaf pan or individual molds. Chill until firm. Dissolve lime jelly powder in remaining boiling water. Add sugar, pine- apple syrup, salt and lemon juice. Cool until mixture is syrupy. Add drained pineapple. Pour on top of firm mixture, chill until firm. Unmold on crisp salad greens, garnish with salad dressing. SHRIMP SALAD 4 cup sharp mayonnaise 1 5 oz. can shrimp 1 tbsp lemon juice 1 cup peas 3 sliced hard cooked eggs 22 cup thinly cut up celery salad greens 6 stuffed olives 4 lemon Thin mayonnaise with 2 tbsp liquid from shrimp and lemon juice. Add drained shrimp peas and remaining ingredients. Mix gently. Place on | salad greens. Garnish with stuffed olives and lemon wedges. SHRIMP — NEW ORLEANS SALAD 1 can shrimps (rinse in cold water) 4 tbsp mazola oil 2 tbsp lemon juice 1 tbsp prepared mustard 1 tbsp celery, chopped 2 tbsp green onions, minced Marinate 2 hours. Serve in lettuce cups. SALMON SALAD 1 can salmon 1 cup finely chopped celery Y cup finely chopped walnuts : salt and pepper to taste Moisten with salad dressing. Serve on lettuce leaf. ¥2 cup chopped walnuts may be added to salad mixture. Serves 6 to 8 or nice for sandwiches. HAM SALAD LOAF 1 pkg lemon jelly powder lg tsp pepper ~ 1% cups boiling water 14 tsp prepared mustard 2 cups diced ham Y% cup chopped pickle - 2 tsp lemon juice 4 cup chopped celery Y% cup mayonnaise Y% cup whipped cream V4 tsp onion juice Dissolve jelly powder in boiling water. Add seasoning. Chill, fold in remaining ingredients. Pour into moistened individual jelly molds. Chill, unmold on lettuce cups and garnish with sliced tomato and olive.
