DESSERTS FORGOTTEN PIE 4 egg whites 1% cups sugar Y4 teaspoon -salt 1 teaspoon 4% teaspoon cream of tartar vanilla Grease well and flour 9” pie plate. Beat egg whites until foamy, add salt and cream of tartar. Gradually add sugar, a little at a time, and vanilla and continue beating until egg whites are stiff and glossy. Place meringue in pie plate, shaping it to form a pie shell. Put in oven preheated to 400°F. Turn off heat and leave until oven is cold. Don't peek! This recipe may be made in the evening and the meringue left in the oven over night. Make custard filling with % cup flour, % cup sugar, pinch of salt, 1 cup light cream, 1 cup milk, 4 egg yolks (well beaten), 1% teaspoons vanilla. Cook over hot water until thick. Cool and pour into meringue shell. Chill. To serve, garnish chilled pie with thawed frozen or fresh strawberries. Yields 6 servings. CALORIE COUNTERS’ GARNISH Extend whipped cream to extra servings and at the same time reduce the calories for the “weight-watchers”. 1 stiffly beaten egg white may be added to as little as % cup cream whipped, or as much as % pint whipped.
