COTTAGE CHEESE PIE 114 cups cottage cheese 1 tbsp orange juice 4 cup raisins, well washed Y% tsp each of orange and lemon rind 1% cup cream grated 14 cup sugar is pinch of salt 2 eggs, well beaten sprinkle with nutmeg Mix all ingredients together and fill unbaked pie shell. Cover with lattice crust and bake in a moderate oven until knife inserted in filling comes clean. LEMON CAKE PIE 2 tbsp butter 4 tbsp flour 1 cup sugar 2 eggs 1 cup milk juice and rind of 1 lemon Cream butter and sugar, add sifted flour, then beaten egg yolks, milk, lemon juice and grated rind. Fold in stiffly beaten egg whites. Pour into unbaked pie shell. Bake until firm (about 30 minutes). Moderate oven.
